Who doesn't love a good fresh-baked croissant? They're flaky, rich, and so indulgent. Here are a couple recipes featuring croissants that will make you fall in love with them all over again:

Grilled PB and B Sandwiches

Grilled peanut butter and banana sandwiches are the perfect solution for those who need a filling meal but don't have a lot of time for preparations. They should be ready in about 10 minutes from start to finish.

The peanut butter is a good source of protein and healthy fats that will keep you feeling full until your next meal. And the bananas provide some important nutrients, such as potassium, that your body needs to maintain optimal health. Here's what you'll need to make a quick yet tasty PB and B sandwich for breakfast, lunch, or dinner:

  • 1 croissant, cut in half lengthwise

  • 2 tbsp peanut butter

  • 1 medium banana, cut into thin slices

  • 2 tsp butter or margarine

  • 1 tsp cinnamon

Start by melting the butter or margarine in a microwave or on the stove, then pour it into a small bowl. Add the cinnamon to the melted mixture, stir until well combined, and set the bowl aside.

Spread a tablespoon of peanut butter on the inside of each half of the croissant and place the bananas on one half. Then close the sandwich so the croissants cover the bananas. Use a spoon or kitchen brush to spread your buttery cinnamon spread on top and bottom of your sandwich and then place it in the oven that's been preheated to 250 degrees for about 5 minutes, turning it over once a couple minutes in. You'll be left with a slightly crispy, sweet, and hearty meal that everyone in the household is sure to enjoy.

Cream Cheese, Fig, and Walnut Bites

If you want to impress dinner guests or you're looking for something interesting to put on the table so you don't have to hear your kids complain about being served the "same old" thing, give these filling cream cheese, fig, and walnut bites a try.

These bites make great appetizers and can help round out a meal of salad, soup, or pasta. To make 8 cream cheese, fig, and walnut bites you'll need the following ingredients:

  • 1 croissant

  • 4 tbsp cream cheese

  • 3-4 fresh figs, stemmed and cut into quarters (if you only have dried figs, soak them in warm water for about an hour before using them)

  • ½ cup roasted walnuts

  • 2 tbsp finely chopped green onion

  • 1 tsp lemon juice

  • ½ tsp smoked paprika

Place the cream cheese, green onion, and lemon juice in a medium-sized bowl and set aside. Finely chop the walnuts and add them to the bowl. Use a spoon to mix all the ingredients together until they're thoroughly distributed throughout the cream cheese. Set the bowl aside again.

Cut your croissant in half like you would for a sandwich, then cut each half into four pieces. Spread a generous amount of the cream cheese spread on each croissant piece and then sprinkle them with a little smoked paprika. You can serve them as-is or bake them in the oven at about 300 degrees until they croissants get slightly crispy.

Growing up, I was daddy’s little girl. I followed my father everywhere. I even wanted to dress like him. When I was 4 years old, I was so excited when he bought the two of us matching pairs of cowboy boots. Sadly, this amazing man was diagnosed with lymphoma a few months ago. For the past couple of months, he has been undergoing chemotherapy treatments. When he completes his treatments in a few weeks, I hope the entire family will celebrate in style.
